A Valentine's Feast, with a slight change of plans...

Paul was going to make the Pimento Cheese Stuffed Chicken, but then realized he bought the chicken breasts too thin...so instead of him leaving to go back to the store, i told him to just take a different recipe from the week we had planned out and use that. So that's what he did, and he did it well. It was really good. I can't even explain how strange it was to lay on the couch with "What Not To Wear" playing while he cooked and made the house smell divine. A strange feeling, but not one that I wouldn't mind again.
We also managed to grab a Boston Creme Pie while at the grocery store and had that for dessert. it was delicious! Anyway, on to the recipe! Courtesy of Cooking Light Magazine.

Sautéed Chicken with Sage Browned Butter
Ingredients
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
1/2 cup all-purpose flour
3 tablespoons butter
2 sage sprigs
1 tablespoon minced shallots
1 teaspoon chopped fresh thyme
2 tablespoons lemon juice
Fresh sage leaves (optional)
Preparation
1. Place each breast half between 2 sheets of plastic wrap; pound to 1/4-inch thickness. Sprinkle with salt and pepper. Heat a large skillet over medium-high heat; coat with cooking spray. Place flour in a shallow dish; dredge chicken in flour. Add chicken to pan; sauté for 4 minutes on each side or until done. Remove chicken from pan.

2. Add butter and sage sprigs to pan; cook over medium heat until butter browns. Discard sage. Add shallots and thyme; cook for 30 seconds. Add lemon juice; cook for 30 seconds. Serve with chicken. Garnish with sage leaves, if desired.

Menu planning for Sunday's big game.

Even though my boys the Pats (don't hate) aren't in the Superbowl, it doesn't make it any less exciting! Here are some ideas of making low-cal snacks for the game. The big boys won't even know they are low fat :)

Date, Walnut and Blue Cheese Ball

Serving Size 2 tablespoons
Ingredients
* 1 cup (4 ounces) crumbled blue cheese
* 1 tablespoon nonfat buttermilk
* 5 ounces fat-free cream cheese, softened
* 3 ounces 1/3-less-fat cream cheese, softened
* 3 tablespoons minced pitted Medjool dates (2 to 3 dates)
* 1 tablespoon minced shallots
* 1/2 teaspoon grated lemon rind
* 1/4 teaspoon kosher salt
* 1/4 teaspoon black pepper
* 1/4 cup minced fresh flat-leaf parsley
* 2 1/2 tablespoons finely chopped walnuts, toasted

Preparation

1. Place first 4 ingredients in a large bowl; beat with a mixer at medium speed 2 minutes or until smooth and creamy. Add dates, shallots, lemon rind, salt, and pepper; beat at medium speed until well blended, scraping sides of bowl as necessary.

2. Spoon cheese mixture onto a large sheet of plastic wrap. Form into a ball, using a rubber spatula. Wrap cheese ball in plastic wrap; chill overnight.

3. Combine parsley and walnuts in a shallow dish. Unwrap cheese ball; gently roll in nut mixture, coating well. Place on a serving plate. Serve immediately, or cover and refrigerate until ready to serve.

Garlic Flatbreads with Smoked Mozzarella and Tomato Vinaigrette

Serving Size 1 wedge (makes 12)
Ingredients
* Flatbreads:
* 1/4 cup whole wheat flour (about 1 ounce)
* 1 cup warm water (100° to 110°), divided
* 1 package dry yeast (about 2 1/4 teaspoons)
* 2 1/4 cups all-purpose flour, divided (about 10 ounces)
* 1/2 teaspoon salt
* Cooking spray
* 1 teaspoon cornmeal
* 4 garlic cloves, thinly sliced
* Topping:
* 3 tablespoons balsamic vinegar
* 2 tablespoons extravirgin olive oil
* 1/4 teaspoon salt
* 1/8 teaspoon freshly ground black pepper
* 1 garlic clove, minced
* 3/4 cup halved red cherry tomatoes (about 4 ounces)
* 3/4 cup halved yellow cherry tomatoes (about 4 ounces)
* 1 cup (4 ounces) shredded smoked mozzarella cheese
* 1/2 cup thinly sliced fresh basil

Preparation

To prepare flatbreads, lightly spoon whole wheat flour into a dry measuring cup; level with a knife. Combine whole wheat flour, 1/4 cup water, and yeast in a bowl; let stand 10 minutes.

Lightly spoon all-purpose flour into dry measuring cups, and level with a knife. Combine 2 cups all-purpose flour, 1/2 teaspoon salt, and remaining 3/4 cup water in a large bowl. Add yeast mixture, and stir until a dough forms. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 10 minutes); add enough of remaining 1/4 cup all-purpose flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel sticky). Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.)

Preheat oven to 450°.

Punch dough down; cover and let rest 5 minutes. Divide dough in half. Roll each half into a 9-inch circle on a lightly floured surface; place on baking sheets sprinkled with cornmeal. Lightly coat dough with cooking spray. Sprinkle dough evenly with sliced garlic; press garlic into dough using fingertips. Bake at 450° for 10 minutes or until crisp and garlic begins to brown. Remove flatbreads from oven; cool on wire racks.

To prepare topping, combine vinegar, oil, 1/4 teaspoon salt, pepper, and minced garlic in a medium bowl. Add tomatoes; toss gently.

Preheat broiler.

Sprinkle each flatbread with 1/2 cup cheese; broil flatbreads 1 minute or until cheese melts. Remove from oven; top each flatbread with half of tomato mixture. Sprinkle each flatbread with 1/4 cup basil. Cut each flatbread into 6 equal wedges.

Lemony Chicken Saltimbocca

We like to use perfect portion chicken, and since it was sale at like 50% off this weekend, we stocked up!
Then I got the mail and my new Cooking Light magazine was there...with a feature on Chicken Makeovers...fate? I say yes.

So i decided to make the recipe on the cover. Done in 20 minutes. Easy for a weekday. I did make a little more sauce that i was suppose to, so i could toss the angel hair in it.

EDIT: after eating this, i would cut back on the lemon JUST a hair. Hubby thought it was ok, but it was a little too lemony. Next time i'm going to add some fresh crushed garlic as well.

Lemony Chicken Saltimbocca
Ingredients
4 (4-ounce) chicken cutlets
1/8 teaspoon salt
12 fresh sage leaves
2 ounces very thinly sliced prosciutto, cut into 8 thin strips
4 teaspoons extra-virgin olive oil, divided
1/3 cup fat-free, lower-sodium chicken broth
1/4 cup fresh lemon juice
1/2 teaspoon cornstarch
Lemon wedges (optional)

Preparation
1. Sprinkle the chicken evenly with salt. Place 3 sage leaves on each cutlet; wrap 2 prosciutto slices around each cutlet, securing sage leaves in place.

2. Heat a large skillet over medium heat. Add 1 tablespoon oil to pan, and swirl to coat. Add chicken to pan; cook for 2 minutes on each side or until done. Remove chicken from pan; keep warm.

3. Combine broth, lemon juice, and cornstarch in a small bowl; stir with a whisk until smooth. Add cornstarch mixture and the remaining 1 teaspoon olive oil to pan; bring to a boil, stirring constantly. Cook for 1 minute or until slightly thickened, stirring constantly with a whisk. Spoon sauce over chicken. Serve with lemon wedges, if desired.

Low Fat, High Taste Breakfast

Good Ol' Hungry Girl again. This book is going to be my new bible i swear. This does take some time to cook, but it's so worth it!

The Big Apple French Toast Casserole
Ingredients:
2 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
8 slices light bread, cut into cubes
1 apple (preferably Fuji), cored, peeled, and diced
4 oz. fat-free cream cheese, room temperature
1 1/4 cups light vanilla soymilk
1 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 cup plus 2 tbsp. sugar-free pancake syrup, divided
1/4 tsp. cinnamon
1 no-calorie sweetener packet (like Splenda), or more to taste

Directions:
Preheat oven to 350 degrees.

In a small microwave-safe bowl, microwave butter until melted. Set aside.

Spray an 8-inch by 8-inch baking dish with nonstick spray. Place bread cubes evenly along the bottom of the dish. Sprinkle diced apple evenly over the bread.

In a medium-large bowl, combine melted butter, cream cheese, soymilk, egg substitute, 2 tbsp. syrup, cinnamon, and sweetener. If you like your French toast pretty sweet, add an extra packet of sweetener. Using a handheld electric mixer set to medium speed, mix until lump-free and smooth. Pour mixture over the bread and apple.

Make sure bread is soaked in the liquid mixture. If needed, toss lightly to coat. Bake in the oven for about 45 minutes, until egg mixture is pretty firm and cooked through. (Be sure not to overcook, as bread could burn.) Let cool slightly.

Cut into quarters and serve with remaining 1 cup syrup for dipping. Dig in!

Bring on the strawberries!

Have you ever seen those dessert shells they always have in the produce section of the grocery store? Well i did, and that's where the story starts. talking to my cousin Steph this week she mentioned strawberry shortcake and that triggered the severe craving for it. Eating healthy is fine and well, until you hit a craving for something like strawberry shortcake...

So take at the grocery store i decided i was going to give it a whirl with the dessert shells. I picked them and looked at the Nutrtition label, and umm HELLO! 120 calories and 1 gram of fat. Why thank you to the makers of these little cake of heaven!.

I came home and grabbed my cutting board, knife and bowl and sliced up the strawberries ( i made all of the strawberries for almost 2 cups), then adding 1 tablespoon of sugar to let them sit in (about 2 hours), creating the most delish syrup-y goodness. I placed them in the shells and topped with fat free cool whip.

AMEN. HALLELUJAH. PRAISE JESUS.
they were exactly what i need to kick that shortcake habit.

Slower cooker love

i grabbed a couple new cookbooks this weekend and am VERY happy with my selections. Hungry Girl is my new fave....like ever.

Paul picked out this recipe for dinner tonight. Served with Wheat rolls it's a hit :)

Slow Cookin' BBQ Pulled Chicken

Ingredients:
1 1/2 lb. raw boneless skinless lean chicken breasts, halved
1 cup canned tomato sauce
1/2 cup ketchup
2 tbsp. plus 2 tsp. brown sugar (not packed)
2 tbsp. plus 2 tsp. cider vinegar
2 tsp. garlic powder
Optional: red pepper flakes, to taste

Directions:

Place all ingredients except the chicken in the crock pot. Stir until mixed. Add chicken and coat well with the sauce.

Cover and cook on high for 3 - 4 hours OR on low for 7 - 8 hours, until chicken is fully cooked.

Remove all the chicken and place it in a bowl. Shred each piece using two forks -- one to hold the chicken in place and the other to scrape across the meat and shred it. Return the shredded chicken to the crock pot, and mix well with the sauce.

If you're serving a group, keep the crock pot on its lowest setting, so the chicken stays warm. If you like, season to taste with red pepper flakes. Eat up!
